Ethiopia’s meat sector is one of the most important in Africa, with significant export potential for both live animals and processed meat products. Similarly, Ethiopia is Africa’s top honey producer, with a long tradition of beekeeping in diverse ecological zones producing honeys of exceptional quality and variety. Yet both sectors face challenges of quality consistency, food safety compliance, value addition, and market positioning that constrain their competitiveness in both domestic and export markets.
LDI’s Meat, Honey, and Wax Products Processing team addresses these challenges through applied research, quality assurance support, processing technology advisory, and capacity building for the full range of stakeholders in these value chains; from smallholder beekeepers and pastoralist cattle producers to large commercial abattoirs and honey exporters.
Meat Processing Services (Red and White Meat)
- Slaughterhouse and Abattoir Support: Technical advisory on slaughter facility design, equipment selection, hygiene and sanitation, ante- and post-mortem inspection systems, carcass handling and chilling, and compliance with Ethiopian and international food safety standards including Codex Alimentarius and importing country requirements.
- Meat Quality Research and Analysis: Applied research and laboratory services for meat quality assessment including: proximate composition (moisture, protein, fat, ash); color and texture measurement; pH and water activity determination; tenderness and eating quality assessment; and food safety parameters (microbial counts, pathogen screening, residue testing).
- Value-Added Meat Product Development: Research and technical support for the development of processed meat products including: traditional Ethiopian meat products (kitfo, tere sega, tibbs) standardization and commercial production processes; modern processed meat products (sausages, patties, dried and cured meats) tailored to Ethiopian market preferences; and packaging and shelf-life extension for domestic retail and export markets.
- HACCP and Food Safety System Development for Meat Processing: Support for development and implementation of Hazard Analysis Critical Control Point (HACCP) plans, Standard Operating Procedures (SOPs), Good Manufacturing Practices (GMP), and Good Hygiene Practices (GHP) for slaughterhouses and meat processing facilities.
- Export Compliance Support: Technical assistance to meat exporters for meeting the standards and certification requirements of target export markets in the Gulf, East Asia, Europe, and regional African markets.
Honey and Beeswax Processing Services
- Honey Extraction and Processing: Technical advisory and research on honey extraction methods (traditional vs. improved centrifugal extraction), processing to prevent fermentation and preserve quality, filtration and clarification, moisture control, and packaging for both domestic and export markets.
- Honey Quality Analysis and Grading: Laboratory services for honey quality characterization including: moisture content determination; sugar profile (glucose, fructose, sucrose ratios); hydroxymethylfurfural (HMF) content as an indicator of freshness and heat treatment; diastase activity; electrical conductivity and ash content; color classification (Pfund scale); pollen analysis for botanical and geographic origin determination; and residue screening for antibiotics and pesticides.
- Beeswax Processing and Value Addition: Technical support for beeswax processing including: rendering and filtration techniques; quality characterization (melting point, purity, adulteration detection); and market development for both industrial applications (cosmetics, pharmaceuticals, food) and artisanal products.
- Certification and Market Access Support: Guidance for honey producers and exporters on obtaining organic certification, fair trade certification, and other market-access credentials required by premium domestic and international buyers.
